Dr. Diana’s Cool as a Cucumber Salad

This low-calorie cucumber salad contains many nutritional benefits, including hydrating properties, and is a good source of vitamin B, A, B1, B6, C & D, Folate, Calcium, Magnesium, and Potassium, and provides phytonutrients such flavonoids, lignans and triterpenes, which have antioxidant, anti-inflammatory and cancer prevention / fighting properties.

Ingredients:

2 large cucumbers
1/3 Cup Rice Vinegar
1/3 Cup Water
1 TBSP. Sugar
Salt & pepper to taste

Wash cucumbers, slice on the Mueller Austria V-Pro 5 Blade Adjustable Mandoline Slicer into thinly waved slices & set aside. In a separate bowl, whisk rice vinegar, water, sugar, salt, and pepper. Add cucumbers and gently toss in mix. Allow cucumbers to marinate overnight or if you are serving for dinner, make first thing in the morning. Pour into a serving dish, top with sesame seeds and cilantro, and ENJOY!

Interesting Trivia: Did you know that cucumbers are not vegetables? Technically, cucumbers are a fruit.
